Cheat Cheese Cake

I have been asked a few times for the recipe for these. I don’t remember where I saw this recipe but I have changed and simplified it that much that I’m calling it my own. I hope you enjoy these as they only have a total of 4 ingredients, this one was made with lemon curd but the flavours you could do are endless. Just substitute the lemon curd for what even you want.

– 1 Pkt Biscuits (I Use Either Scotch Fingers or Butternut Snap)

– 1 Tub of Mascarpone Cheese

– 3 Tbsp of Lemon Curd

– 1 Tbsp Butter

Blitz the biscuits in a small food processor and transfer to a bowl. Heat the butter in a small bowl and pour over the blitzed biscuits and mix to combine. Scoop the contents of the mascarpone and the lemon curd into a large bowl and mix to combine. In a glass cup place 2 tablespoons of biscuit mixture in and pat down with a muddler or rolling-pin. Next place 3 tablespoons of mascarpone mixture on top. I garnished with 3 dried rose buds but this was just for decoration. Place in the fridge until ready to serve and enjoy 😀

  1. What a lovely little dessert – and so simple! I might use Greek yogurt and lemon curd, and perhaps throw in a little limoncello for the adults. As you say, the possibilities are endless :).
